Shepherds Pie Italian Style

This is a recipe I found on the ‘Coles shopmate’ app for iPhone. I tried it on Thursday night with minimal help from the MrMan. As this meal divides into four small bowls, it’s excellent for lunch/dinner the next day for us (I took my into work for Friday night dinner).

Ingredients
300g (mince) beef or lamb
2 gloves garlic, crushed
400g can diced tomatoes
420g can red kidney beans
2 tablespoons tomato paste
1 teaspoon beef stock powder
1 tablespoon basil, chopped (optional)
4 potatoes

Directions


Peel and dice your potatoes and set them to boil
Pop the meat and garlic into the pan, cook until browned


Stir in the tomatoes, drained red kidney beans, tomato paste and beef stock powder
Simmer uncovered for five minutes


Spoon the meat mixture into four small bowls


Mash your potatoes as desired and spoon onto the meat


Pop under the grill until browned on top
(NB: keep an eye on them!)


If desired, add cheese to the top (as MrMan has done here
